Spinach and Ricotta Cavatelli
with Tomato Sauce |
Ingredients

400 g. ricotta cheese
200 g. blanched and chopped
1 large egg
1 teblespoon olive oil
250 g. flour
|
150 g. semolina
3/4 teblespoon salt
1/2 teaspoon white pepper
3 tablespoon grated parmisan cheese
1-1/2 teaspoon baking powder

Method
|
Put the ricotta, spinach, egg yolk and olive oil in a food processor and process to
form a paste. Add the flour, semolina, salt and white pepper and process until the mixture comes together to form a ball. Wrap the dough in cling film and let to stand at room temperature for 30 minutes. Cut the dough into 10 equal pieces. On a lightly floured working surface, using both hands, roll out each piece of dough into 1 cm. thick rope. With a knife cut the rope into 1 cm. pieces, press the side of a fork lengthwise into the center of each piece. Set the cavatelli on a lightly floured baking sheet. In a large pot of boiling salted water, cook the cavatelli , stirring until they rise to the surface, about 5 minutes. Drain the cavatelli and divide them among 6--8 shallow bowls, pour over the hot tomato sauce on each portion and sprinkle with parmesan cheese. |

100 g. sundry tomatoes
2 tablespoon olive oil
2x400 g. tin tomatoes chopped
4 cloves garlic fine chopped

1 onion fine chopped
1 tablespoon fresh chopped basil
150 ml. chicken stock
salt and freshly ground black pepper

Method
|
Put the sundry tomatoes in a bowl of hot water and soak for about 20 minutes, dry well and
coarsely chop. In a saucepan heat the oil, add the onion and cook for 5 minutes stirring, add tin tomatoes and garlic, continue to cook over moderate heat stirring for few minutes, add the basil and chicken stock, cover the saucepan and sivver over low heat for about 10 minutes, add the sundry tomatoes, transer into a mini processor and puree, season well with salt and black pepper.

Spinaci e Ricotta Cavatelli

Ingredienti

400 g. di ricotta
200 g. di spinaci lessi e tritati
1 uovo
1 cucchiaio olio d'olivo
250 g. di farina

150 g. di semolina
3/4 di cucchiaio sale fino
1/2 cucchiaino di pepe bianco
macinato
3 cucchiai di parmigiano grattugiato

Metodo
|
Mettete la ricotta, spinaci, tuorlo d'uovo e olio in un tritatutto e formate una pasta. Aggiungete
la farina, la semola, sale e pepe continuate a mischiare finche` in tutto diventi come una palla. Togliete il composto e ponetelo su un tavolo umpo` infarinato e lavoratelo bene. Avolgetelo in una pellicola trasparente per alimenti, e lasciatelo riposare per 30 minuti. Tagliate la pasta in 10 parti uguali, e su un tavolo infarinato con tuttedue le mani arrotolate ogni pezzo di pasta formando un cordone di 1 cm. di grosezza, con un coltello tagliate il cordone a pezzeti di 1 cm. di lunghezza, pressate sopra di lungo le punte di una forchetta in ogni pezzetto di pasta cosi formando i cavatelli. metteteli su una teglia spolverata di farina. In una grande pentola piena di acqua bollente e salata cuocete i cavatelli mescolando finche` vengano a galla, per 5 minuti, scolate i cavatelli, divideteli in 6--8 fondine, versate sopra la salsa di pomodoro calda su ogni porzione, spolveratela col parmigiano grattugiato e serviteli ben caldi. |
Ingredienti per la salsa
di pomodoro |
100 pomodori secchi
2 cucchiai olio d'olivo
2x400 g. pomodori pelati
4 spicchi d'aglio finemente tritati

1 cipolla finemente tritata
1 cucchiaio basilico fresco tritato
150 ml. brodo di pollo
sale e pepe nero apena macinato

Metodo
|
Mettete i pomodori secchi in una scodella con acqua calda per 20 minuti, asciugateli e
tagliateli a pezzi. In una casseruola scaldate l'olio e cuocete la cipolla pe 5 minuti mescolando, utitevi i pelati e l'aglio, cuocete a fuoco moderato per alcunio minuti mescolando, aggiungete il brodo, coprite e cuocete a fuoco moderato per circa 10 minuti. Aggiungete i pomodori secchi, trasferite totto in un tritatutto, formando un buon passato, condite bene con sale e pepe.
