Braised Veal Shin Bone

Ingredientes
|
6 Ossobuchi from shin of veal
3 tablespoon plain flour
1/4 litre dry white wine
1 onion chopped
2 stick celery diced
|
2 carrots diced
2 cloves garlic crushed
2x400g tin chopped tomatoes
6 tablespoon oil
100g butter
salt and freshely ground black pepper

Method
|
Put the oil, butter in a roasting tray seal the ossobuco dipped in flour, add the onion,
celery carrots, garlic ' continue cooking until golden brown,add the wine and leave to evaporate at high heat,add salt, pepper and chopped tomatoes, continue to cook at low heat for about 45 minutes, if the sauce is getting dry add same hot stock. check if it's cooked and serve on top of risotto alla Milanese. |

1 cipolla tritata
2 gambe di sedano tagliate a dadini

6 cucchiai d'olio
100g di burro
sale e pepe nero macinato

Metodo
|
In un tegame mettete l'olio e il burro, fate rosolare l'ossibuchi bene infarinati,
aggiungete la cipolla, sedano, carote, e l'aglio, continuate a cuocere finche` tutto prenda colore, aggiungete il vino e fatelo evaporare a fuoco alto,salate pepate, unitevi il pomodoro continuate a cuocere a fuoco moderato per almeno 45 minuti, se il sugo si densa tropo aggiungete umpo di brodo caldo,controllate se e cotto e servitelo con risotto alla Milanese |
