Malloredusu alla Sarda

Ingredients

500g Malloredusu
250g Italian sausage
6 tablespoon olive oil
1 onion fine chopped
1 clove garlic crushed
4 leaf fresh basil

1 teaspoon chopped parsley
1 glass red wine
100g mushrooms roughly chopped
300g tin peeled chopped tomatoes
salt & pepper
80g grated pecorino cheese

Method
|
In a pan put the oil and fry the onion, add the sausage cut into small cubes, mushrooms,
garlic, basil, parsley cook for 5 minutes add the wine and live to evaporate at high heat, add tomatoes salt and pepper, reduce the heat , leave to simmer for 30 minutes.
In a pan cook the malloredusu (this are small shell pasta made in Sardinia with semolina
and water) In salt water simmer for 15 minutes, check if they are cooked but al dente,drain and turn into a hot deep dish, pour the sauce over and sprinkle with cheese. Serve very hot |
Malloredusu alla Sarda

500 gr. Malloredusu
250 gr di salsiccia
6 cucchiai olio d'oliva
1 cipolla finemente tritata
1 spicchio d'aglio finemente tritato
4 foglie di basilico fresco

1 cucchiaino di prezzemolo tritato
1 bicchiere di vino rosso
100 gr di funghi grossolamente trtati
300 gr pomodori pelati tritati
sale e pepe
80 gr pecorino grattugiato

Metodo

In una pentola mettete l'olio e fate cuocere la cipolla, aggiungete la salsiccia tagliata a
piccoli dadini, i funghi, l'aglio, basilico e prezzemolo fate cuocere per 5 minuti aggiungete il vino e lasciate evaporare a fuoco vivo, unitevi i pomodori sale e pepe,continuate a cuocere per 30 minuti a fuoco lento.
In una pentola cuocete i malloradusu (Questi sono gnoccheti fati in Sardegna con semolina
di grano duro e acqua) In acqua salata per 15 minuti o fin che siano cotti al dente, scolateli versateli in una terrina ricropiteli col sugo e spolverate con il pecorino grattugiato, serviteli ben caldi. |
