Spaghetti Carbonara
Ingredients
600g spaghetti
150g streaky bacon
2 tablespoon olive oil
5 egg yolks
150ml single cream
80g grated parmesan cheese
salt & freshly ground black pepper
Method
Cook the spaghetti in salted boiling water, meanwhile cut the bacon into thin strips, put
the oil into a large pan and fry the bacon until golden brown, put the pan aside but keep it
hot. In a bowl beat the egg yolks add the cream , half the cheese, salt and a good pinch of
pepper. Return the pan to the cooker over moderate heat, drain the spaghetti, stir rapidly
into the pan with the bacon, add the egg and cheese mixture, the eggs will cook
immediately when they are mixed into the hot spaghetti, do not allow the spaghetti to
cook after the egg mixture as been added. serve at once on hot plates - This is important
in this dish. sprinkle the rest of the cheese on top.

2 cucchiai olio d'oliva
5 tuorli d'uova
150ml panna
80g parmigiano grattugiato
sale e pepe nero

Metodo
In un largo tegame metete l'olio e fate rosolare la pancetta tagliata a piccoli dadini. in
una terrina mescolate i tuorli d'uovo, il parmigiano la panna sale e pepe nero appena
macinato. Versate gli spaghetti scolati al dente nel tegame dove avvete rosolato la
pancetta, aggiungetevi il contenuto della terrina, mescolate un attimo sulla fiamma e
servite subito.
