In a pan heat the butter and oil, add the shallots and fry gently until soft, add the mushrooms and
cook for 5 minutes, add sultanas, rice, ginger and the flaked salmon, cook for further few minutes season well, take the pan from the heat and put the mixture in a bowl to cool. Meantime with a rolling pin roll the pastry into a rectangle, on top put all the mixture, leaving a good margin, fold the edges of the pastry so that encloses all the mixture. Beat the egg and moister the edges with it so that the pastry sticks together, turn upside down on to a baking sheet and let stand at room temperature for 20 minutes, covered with a damp cloth, brush the pastry with the egg, mark it with a pattern and in the centre make a small hole to allow the steam to escape. Bake in a preheated oven at 200c gas mark 6 for about 35 minutes. Serve with shrimp sauce or melted butter. |

In una padella scaldate l'olio e il burro, fate sofrigere le scalogne finche` siano ben morbide,
aggiungete i funghi e fate cuocere per 5 minuti, unitevi la sultanina, riso, zenzero ed il salmone , fate cuocere per alcuni minuti salate e pepate a vostro gusto, togliete la patella dal fuoco , mettete il composto dentro una scodella e fattela rafreddare, nel fratempo con un materello stendete la pasta a sfoglia a forma di un retangolo, mettete sopra il composto dalla scodella lasciando un paio di centimetri dal bordo della pasta libero, avvolgete la pasta cosi il composto non ne esce fuori sbatete l'uovo e con un pennello bagnate bene in giro il bordo cosi la pasta si appicica bene, giratela da sotto a sopra e posatela su una piastra da forno, lasciatela riposare per 20 minuti coperta con uno staccio umido in un ambiente fresco, bagnatelo con l'uovo sbatutto fateci sopra qualche decorazione e nel centro fate un piccolo bucco cosi viene fuori il vapore quando sta cuocendo, passatelo al forno a 200c gas No 6 per circa 35 minuti. Servite con salsa ci gamberetti o del burro sfuso. |
